Rich, milky pork bone broth with springy noodles, chashu pork, and a jammy soft-boiled egg.

Blanch pork bones in boiling water for 10 minutes. Drain and rinse.
Return bones to pot with fresh water, ginger, and garlic. Boil hard for 3 hours, adding water as needed.
Braise pork belly in soy sauce, mirin, and sake for 1.5 hours until tender.
Soft-boil eggs for 6.5 minutes. Cool and marinate in soy sauce mixture.
Cook noodles according to package. Assemble bowls with broth, noodles, sliced chashu, egg, and green onions.
