Creamy texture with deep mushroom flavor.
Luxuriously creamy Arborio rice with a medley of wild mushrooms, white wine, and aged Parmesan.

Heat stock in a saucepan and keep warm on low heat.
Sauté sliced mushrooms in butter until golden. Season and set aside.
In the same pan, cook diced shallots until soft. Add rice and toast for 1 minute.
Pour in white wine and stir until absorbed.
Add warm stock one ladle at a time, stirring constantly. Wait for each addition to be absorbed before adding the next.
When rice is al dente, stir in mushrooms, Parmesan, and a knob of butter. Season to taste and serve immediately.
