Super creamy and easy. I added chili flakes and it turned out great.

Season chicken breasts with salt, pepper, and Italian herbs.
Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5-6 minutes per side until golden. Set aside.
In the same pan, sauté minced garlic until fragrant, about 30 seconds.
Add sun-dried tomatoes and spinach. Cook until spinach wilts.
Pour in heavy cream and sprinkle in Parmesan. Stir until the sauce thickens slightly.
Return the chicken to the pan. Simmer for 3 minutes until cooked through. Serve immediately.
